My Top 5 Favorite Vegetarian Recipes
1. Stuffed Eggplant Roll-Ups
I actually first saw a stuffed eggplant recipe on “MasterChef Junior” and since a 13-year-old cooked it I was obviously like, “I could do that!” That phrase doesn’t usually follow with me successfully making something. Not this time though! These rollups are simple and absolutely delicious. I make them all the time now.
2. Slow Cooker Enchilada Quinoa
I absolutely adore my slow cooker, and this is by far my favorite thing to make in it. This recipe is technically for a version with chicken, but just take it out! If you want a meat substitute, your local grocery store should sell soy fajita chicken strips or ground meat that could work! I usually just put it in a bowl and use some tortilla chips to scoop it up! Absolutely delicious!
3. Cheesy Garlic Parmesan Spinach Spaghetti Squash
This one is a little more complicated, but if you have some cooking skills, it’s definitely worth it. Spaghetti squash is just so good, and I love anything with cheese or garlic. It literally has all of my favorite ingredients and I couldn’t ask for a better squash recipe.
4. Cheese & Spinach Stuffed Portabellas
Okay, there’s a theme with me – anything stuffed with cheese. This is clearly not a list of recipes for those following a vegan diet. Mushrooms are one of my favorite things to cook and eat, and this recipe is the perfect amount of healthy and soul food.
5. Roasted Vegetable Lasagna
Last but not least, I’ll offer a great lasagna recipe. It’s easy to cut in half and make a smaller portion, which is something I like about it. The roasted vegetables are delicious, and my favorite part is obviously the cheese. The baking is the longest part, but it’s such a good lasagna that is amazing for leftovers too!
